The Eastern Ontario Trails Alliance has a ton of trails. It's awesome riding too!! I went up that way the last weekend of January for a weekend. It was cold, but we put on some miles.
We stayed at a buddies camp, so I can't help you on lodging. Check out atvontario.com or thetrail.ca they can send you a free paper map. You'll be able to pick and choose where you want to go.
